Being grown in greenhouses in La Gacilly, Brittany, has enabled the Edulis population to be homogeneous and its growth and development to be regulated. The plant, overflowing with the precious cellular water, is picked before flowering after being grown for 6 months in a greenhouse. These new shoots are sent to the extractor on the same day as they are harvested.
