To allow for the buds to develop and the leaves to grow in the spring, the Maple tree makes reserves of sugar during summer and autumn, in special structures found in its roots, trunk and even the thinnest branches called medullar rays. There are billions in the Maple tree which give us an idea of the huge quantity of microscopic canals, compressed between vessels in the wood, where the reserves are stored. The tree draws its strength to live and create buds from this immense reservoir of energy.
The Maple tree plantations which provide the sap used in our laboratories are found in Canada, South of Quebec, in the region called Plessisville, 95km to the west of Quebec City. The trees are used when they reach 40 years old and can live until they are 300.
Maple water is harvested at the end of winter for only a few weeks. The maple tree farmers make a hole in the trunk and connect it to a network of tubes which itself links all the trees to a pump station. It is the change between night frosts and thawing which causes the water to build up in the trunk. In February/March, after 2 or 3 days of good weather, a first flow of water is harvested. On average there are roughly 30 more water flows before the temperature increases and the first buds appear, marking the end of the season.
Normal skin contains roughly 70% of water. This balance is fragile and if the water loss is more important than the gain, the skin dehydrates.
At the end of winter, the frozen earth does not allow the Maple tree to assimilate its nutrients. It therefore uses the reserves accumulated in its medullar rays. As the water mounts in the trunk, it gains nutrients, little by little. The Maple sap used by the Yves Rocher laboratories is obtained from the concentration of freshly harvested Maple water.
