You only have to bite into an apple to understand that it is resistant. This aspect is not due to chance but to the presence of pectin. This molecule in the fruit, is found in very high quantities throughout the apple’s flesh. Its role is to ensure the rigidity of the cell walls and in consequence the solidity of the fruit. Other than its structural role in the apple, once it has been transformed into oligosides, pectin acts as a powerful regulator of the apple tree’s metabolism.
